Using my leftover roasted veggies - Egg Casserole

My leftover roasted veggies
- 7 eggs (because that's what I had)
- grated cheese mix (also what was in the fridge)
- a dash of hot sauce
Mixed in leftover veggies and sprinkled cheese on top. Baked at 400 degrees till it was browned and solid all the way through.

My daughter actually ate her whole piece, veggies and all!
