A traditional turkey soup and turkey chili.<br /><br />For the traditional soup I boiled the carcass bones and meat left on them, I also added onions, celery, garlic, & carrots. The seasoning was from the turkey(poultry seasoning, salt & pepper, & rosemary). When the meat fell off the bones I removed the bones and added the cooked pasta & done.<br /><br /><div><a href="http://2.bp.blogspot.com/_Dtz_F_-neC8/S1mz8LE6ocI/AAAAAAAAAns/8yRRXmpEgLg/s1600-h/DSC_0417.JPG"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 266px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5429568672118776258" border="0" alt="" src="http://2.bp.blogspot.com/_Dtz_F_-neC8/S1mz8LE6ocI/AAAAAAAAAns/8yRRXmpEgLg/s400/DSC_0417.JPG" /></a> The turkey chili was made using the legs and wings (which were a bit stringy, but after the fact my mom gave the tip of putting them into to the food processor to break up and mock ground turkey, guess I'll try that next time) I used the same process and added onions, garlic, chili powder & cumin to taste. </div><div> </div><div>Topped it off with shredded cheddar & baked tortilla strips (sliced tortillas with a pizza cutter, sprayed with cooking spray salted and baked at 350 till crisp). </div><div> </div><div>I dig any type of chili so this was great.<br /><br /></div><div></div>Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com2tag:blogger.com,1999:blog-6355695207521481159.post-75154358421854505442010-01-22T09:08:00.011-05:002010-01-26T16:56:20.168-05:00Mini Turkey Pies<a href="http://1.bp.blogspot.com/_Dtz_F_-neC8/S1mx8-6GLgI/AAAAAAAAAnc/7xXx7J_1gFo/s1600-h/DSC_0407.JPG"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 316px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5429566487008783874" border="0" alt="" src="http://1.bp.blogspot.com/_Dtz_F_-neC8/S1mx8-6GLgI/AAAAAAAAAnc/7xXx7J_1gFo/s400/DSC_0407.JPG" /></a> This is adapted from another one of <a href="http://www.rachaelrayshow.com/food/recipes/turkey-wellington/">Rachel Ray's </a>ideas. It's a great use of your leftover turkey, stuffing & cranberry sauce. Shred the pork.<br /><br />When done - put your water in a sauce pan till boils, whisk in some flour and any seasoning you like and you're done, add it to the shredded pork, and serve it up on a roll.<br /><br />Another option is to skip the gravy and add BBQ sauce, which my husband thought I meant when I said we were having pulled pork so he was a little dissapointed. Sorry, Hun:)Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com0tag:blogger.com,1999:blog-6355695207521481159.post-320432315834313622010-01-05T11:25:00.011-05:002010-01-05T11:55:55.369-05:00Meals made with Angel Food Ministries Food<a href="http://4.bp.blogspot.com/_Dtz_F_-neC8/S0Nphjw0s8I/AAAAAAAAAjU/XDxagr1Q5Sc/s1600-h/179.JPG"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 238px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5423294401540830146" border="0" alt="" src="http://4.bp.blogspot.com/_Dtz_F_-neC8/S0Nphjw0s8I/AAAAAAAAAjU/XDxagr1Q5Sc/s400/179.JPG" /></a> Chicken Quesadillas - with chicken strips and tortillas from <a href="http://cheapcookinmama.blogspot.com/2009/12/help-for-your-holiday-and-grocery.html">Angel Food </a><br /><br />I figured since I posted about I might as well show you what I got - I did not take pictures of the chicken tenders or fish sticks but my kids ate thos right up on our busy nights. First off - getting it was nice and simple, the place that we went to was very fast an efficient.<br /><br />The box was made to feed a family of four for one week (at least for dinners) though you still needed to make some extra sides etc. We are a family of six (though baby boy is still nursing, so it's just me just eating a little extra:) so I did have to adapt some of the meals, and stretch the meat (which is what I usually do to save money anyway) but some required no stretching.<br /><br />Though I usually strive to make my family homecooked meals the chicken fingers and fish sticks were easy fixes after a TaeKwonDo belt-test and to give to the baby-sitter on our date night when I made my husband take me to see "New Moon".<br /><br />So over all - our first angel food box was a helpful addition to our meals and food budget. I will be ordering in January as well and keep you updated. In the meantime - you may want to try it for yourself and lower that food budget.<br /><br /><a href="http://cheapcookinmama.blogspot.com/2010/01/meals-made-with-angel-food-ministries.html">Pics of some of the meals I made here</a>Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com0tag:blogger.com,1999:blog-6355695207521481159.post-68816015083676202902009-12-27T20:22:00.001-05:002009-12-27T20:23:50.237-05:00Cookbook giveawayVisit the $5 Dinner blog and <a href="http://www.5dollardinners.com/2009/12/10aday-giveaway-5-dinner-mom-cookbook.html">enter to win her new cookbook</a>!Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com0tag:blogger.com,1999:blog-6355695207521481159.post-64253609427438527452009-12-27T20:04:00.009-05:002010-01-05T09:32:52.240-05:00Chicken Potato Pancakes<a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://3.bp.blogspot.com/_Dtz_F_-neC8/SzgG9VVjydI/AAAAAAAAAi0/Z5P5Cfv7O18/s1600-h/potato+puffs+n+thai+chicken+wraps+017.jpg"><img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 400px; height: 336px;" src="http://3.bp.blogspot.com/_Dtz_F_-neC8/SzgG9VVjydI/AAAAAAAAAi0/Z5P5Cfv7O18/s400/potato+puffs+n+thai+chicken+wraps+017.jpg" alt="" id="BLOGGER_PHOTO_ID_5420089802309749202" border="0" /></a><br /><br />This is a great way to use up your leftover chicken, you can even throw in some leftover veggies or whatever else you have to use up.<br /><br />What's in the mix...<br />- mashed potatoes (with some cornstarch. egg and seasoning)<br />- shredded chicken thighs<br />- sauteed onions & garlic with herbs<br /><br /><a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://2.bp.blogspot.com/_Dtz_F_-neC8/SzgEor0pMaI/AAAAAAAAAic/oI7ahDD3J9w/s1600-h/potato+puffs+n+thai+chicken+wraps+016.jpg"><img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 400px; height: 174px;" src="http://2.bp.blogspot.com/_Dtz_F_-neC8/SzgEor0pMaI/AAAAAAAAAic/oI7ahDD3J9w/s400/potato+puffs+n+thai+chicken+wraps+016.jpg" alt="" id="BLOGGER_PHOTO_ID_5420087248545198498" border="0" /></a>Dip in beaten eggs and then potato flakes.<br /><a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://1.bp.blogspot.com/_Dtz_F_-neC8/SzgEe5l_EXI/AAAAAAAAAiU/ncFaOZ1U1vA/s1600-h/potato+puffs+n+thai+chicken+wraps+019.jpg"><img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 299px; height: 400px;" src="http://1.bp.blogspot.com/_Dtz_F_-neC8/SzgEe5l_EXI/AAAAAAAAAiU/ncFaOZ1U1vA/s400/potato+puffs+n+thai+chicken+wraps+019.jpg" alt="" id="BLOGGER_PHOTO_ID_5420087080443122034" border="0" /></a>This is filling enough to simply serve with a side salad and you're done. Proud to say I'm now at 21 weeks, cooking again, working out and feeling good!<br /><br />Last week we found out that baby #4 is a boy. He's following two boys and a girl and big sis was really hoping and praying for a girl but she is begrudgingly coping.<br /><br />Anywho - thought I'd start off with something easy, tasty and cheap:)<br /><br />Here's my Chicken Chili Mac...<br /><br /><a href="http://3.bp.blogspot.com/_Dtz_F_-neC8/SkQN5htyoUI/AAAAAAAAAf4/ht0BrBzo88c/s1600-h/DSCN7982.JPG"><img id="BLOGGER_PHOTO_ID_5351417539177128258" style="margin: 0px auto 10px; display: block; width: 400px; height: 264px; text-align: center;" alt="" src="http://3.bp.blogspot.com/_Dtz_F_-neC8/SkQN5htyoUI/AAAAAAAAAf4/ht0BrBzo88c/s400/DSCN7982.JPG" border="0" /></a> This crockpot meal was so simple, I started it before taking my kids to the swim club, and all I had to do was add the macaroni when we came home and then eat! My kids gobbled it up after a long day of swimming (and then my youngest conked out about 15 minutes later).<br /><br />What's in it?<br />- two chopped green peppers<br />- one onion<br />- one tomato (I would have added more but it was all I had today, diced tomatoes would have been really good too)<br />- two cans of chili beans<br />- three chicken breasts<br />- chili powder, cumin, cilantro and salt to taste<br />- water (enough to cover the ingredients)<br />- 1 pound macaroni<br />- shredded cheese (your choice) for a topping<br /><br />Everything but the macaroni went into the crockpot early in the day.<br /><br />When I got home I removed and shredded the chicken, added the macaroni and let it cook till tender, then I put the chicken back and it was ready to serve.<br /><br />I'm thinking I'll use the leftovers for some Baked Chicken Chili Mac and Cheese. MmmmmmJaninehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com2tag:blogger.com,1999:blog-6355695207521481159.post-71983602305730172392009-03-25T12:17:00.002-04:002009-03-25T12:21:12.065-04:00Sorry for the silence - news to shareSorry for the silence. However, I have news to share. At the moment I have not been posting or reading many food blogs because I can't seem to <span class="blsp-spelling-corrected" id="SPELLING_ERROR_0">stomach</span> it. The reason is that I'm expecting! So in a few weeks, hopefully, the first trimester will be through and I will like food again.<br /><br />Right now anything healthy and anything with a red sauce is quite repulsive to me, which is killing me, but I really like macaroni and cheese:)Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com11tag:blogger.com,1999:blog-6355695207521481159.post-51708974190400091392009-03-05T13:27:00.009-05:002009-03-10T16:26:41.179-04:00Rachel Ray's "Moo Shu Noodles"Another one of Rachel's (<a href="http://www.rachaelrayshow.com/food/recipes/moo-shu-noodles/">recipe here</a>) and it was a big family hit. I cut some corners to save some pennies on this one. All the veggies were bought from produce junction and I used button mushrooms instead of <span class="blsp-spelling-error" id="SPELLING_ERROR_0">shiitake</span> and thin cut pork chops with the bone in instead of boneless (they were cheaper and I got them on manager's special).<br /><br />The fettuccine was <span class="blsp-spelling-error" id="SPELLING_ERROR_1">Shoprite's</span> brand, I didn't use egg ones because I couldn't find them.<br /><br /><a href="http://3.bp.blogspot.com/_Dtz_F_-neC8/SbAcXU9P-tI/AAAAAAAAAfw/VAl4za-bduc/s1600-h/DSCN8217.JPG"><img id="BLOGGER_PHOTO_ID_5309775147757992658" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 186px; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_Dtz_F_-neC8/SbAcXU9P-tI/AAAAAAAAAfw/VAl4za-bduc/s400/DSCN8217.JPG" border="0" /></a> shredded ginger and scallions<br /><br /><div><a href="http://2.bp.blogspot.com/_Dtz_F_-neC8/SbAcOASHcMI/AAAAAAAAAfo/Bv-Xh-p5aWI/s1600-h/DSCN8220.JPG"><img id="BLOGGER_PHOTO_ID_5309774987589546178" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 321px; CURSOR: hand; HEIGHT: 400px; TEXT-ALIGN: center" alt="" src="http://2.bp.blogspot.com/_Dtz_F_-neC8/SbAcOASHcMI/AAAAAAAAAfo/Bv-Xh-p5aWI/s400/DSCN8220.JPG" border="0" /></a><br /><br /><div><a href="http://1.bp.blogspot.com/_Dtz_F_-neC8/SbAb3mXMi5I/AAAAAAAAAfg/dRIhc42rTlo/s1600-h/DSCN8222.JPG"><img id="BLOGGER_PHOTO_ID_5309774602674408338" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 254px; CURSOR: hand; HEIGHT: 400px; TEXT-ALIGN: center" alt="" src="http://1.bp.blogspot.com/_Dtz_F_-neC8/SbAb3mXMi5I/AAAAAAAAAfg/dRIhc42rTlo/s400/DSCN8222.JPG" border="0" /></a> Instead of using <span class="blsp-spelling-error" id="SPELLING_ERROR_2">hoisin</span> and soy sauce I just used up the rest of my <span class="blsp-spelling-error" id="SPELLING_ERROR_3">Soyaki</span> from Trader <span class="blsp-spelling-error" id="SPELLING_ERROR_4">Joes</span> and added a <span class="blsp-spelling-corrected" id="SPELLING_ERROR_5">little</span> bit of soy sauce (I don't like things too sweet).<br /><br /><div><a href="http://3.bp.blogspot.com/_Dtz_F_-neC8/SbAbs-jpm9I/AAAAAAAAAfY/kjIsKP5Xh2Q/s1600-h/DSCN8224.JPG"><img id="BLOGGER_PHOTO_ID_5309774420190534610" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 232px; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_Dtz_F_-neC8/SbAbs-jpm9I/AAAAAAAAAfY/kjIsKP5Xh2Q/s400/DSCN8224.JPG" border="0" /></a> After I browned the meat I sauteed the ginger and scallions and then added the mushrooms, finally the <span class="blsp-spelling-error" id="SPELLING_ERROR_6">nappa</span> cabbage.<br /><br />Another note - I've started using <span class="blsp-spelling-corrected" id="SPELLING_ERROR_7">bouillon</span> or "better than <span class="blsp-spelling-corrected" id="SPELLING_ERROR_8">bouillion</span>" instead of the stock in the box to save money. First you brown the sausage (leave it whole or in large pieces which you will cut right before serving) and then stick it in the crockpot with diced tomatoes, the cut up potatoes and whatever spices you like (garlic and basil are winners in this dish).<br /><br />Before serving remove the sausage and cut them (much easier to cut when fully cooked) add them back in and serve.<br /><br />Two out of three kids actually asked for seconds and hubby made it the next days lunch.<br /><br />Part of the $5 dinner challenge, though I don't know the exact cost, math was never a strength of mine:)<br /><a href="http://5dollardinners.com/"><img src="http://i39.photobucket.com/albums/e188/therapymom/5DinnerButton.png" /></a>Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com0tag:blogger.com,1999:blog-6355695207521481159.post-54045230856191621892009-02-26T16:56:00.004-05:002009-02-26T17:04:26.582-05:00A few more Flat Belly Diet Meals<a href="http://2.bp.blogspot.com/_Dtz_F_-neC8/SacQi2Dtc9I/AAAAAAAAAew/zvJ2FdeVWcs/s1600-h/DSCN7323.JPG"><img id="BLOGGER_PHOTO_ID_5307228876692091858" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 373px; TEXT-ALIGN: center" alt="" src="http://2.bp.blogspot.com/_Dtz_F_-neC8/SacQi2Dtc9I/AAAAAAAAAew/zvJ2FdeVWcs/s400/DSCN7323.JPG" border="0" /></a> Tuscan Chicken - I found this surprisingly good served over greens, normally it would be pasta or some type of grain. It's from the Rachel Ray show so <a href="http://www.rachaelrayshow.com/food/recipes/ham-and-cheese-strata/">you can get the recipe here</a>. Basically, the only things I changed were, I used frozen asaparagus (defrosted), I used shredded cheddar (pretty cheap) and used my own bread machine bread.<br /><br /><a href="http://4.bp.blogspot.com/_Dtz_F_-neC8/SaLyiEc3NqI/AAAAAAAAAeQ/Sr-CkU6sLgw/s1600-h/DSCN7048.JPG"><img id="BLOGGER_PHOTO_ID_5306069978120140450" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 299px; TEXT-ALIGN: center" alt="" src="http://4.bp.blogspot.com/_Dtz_F_-neC8/SaLyiEc3NqI/AAAAAAAAAeQ/Sr-CkU6sLgw/s400/DSCN7048.JPG" border="0" /></a> Don't make my mistake, I forgot to grease the dish which made it very hard to get out:)<br /><br /><div><a href="http://2.bp.blogspot.com/_Dtz_F_-neC8/SaLyTpgLj-I/AAAAAAAAAeI/cWa7bqSyFJU/s1600-h/DSCN7051.JPG"><img id="BLOGGER_PHOTO_ID_5306069730368131042" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 294px; TEXT-ALIGN: center" alt="" src="http://2.bp.blogspot.com/_Dtz_F_-neC8/SaLyTpgLj-I/AAAAAAAAAeI/cWa7bqSyFJU/s400/DSCN7051.JPG" border="0" /></a> Simply pour the beaten eggs over the broken bread and then top with ham, asparagus and cheese. Then bake.<br /><br /><br /><div><a href="http://2.bp.blogspot.com/_Dtz_F_-neC8/SaLyFEWpUHI/AAAAAAAAAeA/qbr2OezIR9Y/s1600-h/DSCN7053.JPG"><img id="BLOGGER_PHOTO_ID_5306069479877857394" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 288px; TEXT-ALIGN: center" alt="" src="http://2.bp.blogspot.com/_Dtz_F_-neC8/SaLyFEWpUHI/AAAAAAAAAeA/qbr2OezIR9Y/s400/DSCN7053.JPG" border="0" /></a> Mmmm<br /><br /><div></div></div></div></div>Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com2tag:blogger.com,1999:blog-6355695207521481159.post-54853256268487465142009-02-19T09:31:00.004-05:002009-02-19T09:44:26.968-05:00Pretzel Crusted Chicken<a href="http://3.bp.blogspot.com/_Dtz_F_-neC8/SZ1tdcq6_tI/AAAAAAAAAd4/Jca6fkHgAsI/s1600-h/DSCN7057.JPG"><img id="BLOGGER_PHOTO_ID_5304516288792166098" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 299px; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_Dtz_F_-neC8/SZ1tdcq6_tI/AAAAAAAAAd4/Jca6fkHgAsI/s400/DSCN7057.JPG" border="0" /></a> I had made this a while ago and forgot to post but I just ran across the picture. Anyway, this is one of my absolute favorites (my family's too) so I had to share.<br /><br />Original recipe is from Rachel Ray but I just ad lib now. Really simple.<br /><br />Chicken tenderloins (buy frozen, they're so much more affordable) dipped in egg, then ground pretzels (I use the food processor) and a second round of egg and pretzel (keep your cost down and buy the no name store brand pretzel, no one will tell the difference), then simply fry till done.<br /><br />They're topped with a mustard cheese sauce. Easy route, just melt some shredded cheddar and mix in spicy brown mustard, longer route, but still easy, make a rue with butter and flower, add some chicken broth and milk and then add cheese and mustard.<br /><br />Then top with chopped dill pickles. To me you can't get any better than that!<br /><br />BTW - the side is Trader Joe's frozen marinated and grilled eggplant and zucchini.Janinehttp://www.blogger.com/profile/13083428308034026749noreply@blogger.com2
